How do you make a sub-menu (or child pages, or whatever smug calls them) on the main nav bar? I'm sure there must be a tutorial somewhere, but can't find it... Thanks in advance!

take a look at the section Create a Dropdown Menu on help page at http://help.smugmug.com/customer/portal/articles/1222523.

Got it. Next question: do the pages all have to be in a single folder, and will the folder itself show on the page, or can you just direct it to each page? (I"m doing various portfolios with a carousel layout, so they have to be pages not galleries)

You could link to a folder with all the pages in it. Then add a "folders, galleries and pages" content block to the folder.

Any item you add to the menu content block you can link to any page you'd like. The links can point to different parts of your site, even to external links. To manually create a nested drop down item, click and hold on the gray bar left of the menu item and drag it to the desired location. If you indent it to the right, it'll be a nested drop down entry for the previous item. See the last two screenshots on the menu content block help page.
