Add feature image to gallery that has no photos?

I have some galleries that currently only have Vimeo content blocks. At some point in the future they may have some photos so I would like to use a gallery rather than a page for these videos. But a gallery, unlike a page, can only get a feature image from within itself. Is there any way I can override this and add a feature image to a gallery without actually putting a photo in the gallery. Or, if I have to put a photo in the gallery, is there a way to have it not display when a visitor opens the gallery? I did a search here on hiding photos with CSS but didn't come up with anything that could do this.

    You can browse to anywhere on your site to select a featured photo.
    Click the home icon in the top breadcrumb in the feature photo popup.
