Journal Style Gallery Customization

I'm attempting to create a travel journal/gallery. So far I've uploaded all the photos to a gallery, set up the link to the page and selected journal for the style. The problem I'm facing is the text.

Here's the page I'm referring to:
https://doehringm93.smugmug.com/9-Days-in-Hong-Kong-Thailand-S/

What I'd like to do is to place a brief description of the trip and a title such as "Day 1" under where it says "9 Days in...". Obviously I'd want to format that with italics, bold, centered, etc.

I did a lot of hunting around various sites I've been following to see if I could find the layout I was thinking about.

That one above is a good example of the sort of layout I'm trying to accomplish.

I also would like to have various text boxes in-between some of the photos. The above trip encompassed several countries so I wanted to put in a short interjection/description before the next group of photos begin. The other pge I linked also shows that.

On another note, do I have control over how many pictures display on a page? My gallery comes up as 6 or so pages, I'd rather that not be so long if I can customize it.

When I tried doing this myself I tried to add a text box from contect block (also tried a seperator) but neither would allow me to place inbetween photos.

You might try using a page instead of a gallery.

In a gallery the only way to place text between the photos is to use the title and caption of the photo. These are both placed below the photo. This is a journal-style gallery on my site that uses both title and caption - http://www.denisegoldberg.com/Medley/galleries-by-date/n-GzNHG/. Perhaps a setup like this would work for you.

With a journal-style gallery I am not aware of a setting that allows you to control the number of photos shown on a page.

In a page you can drag content elements in wherever you'd like. Here's a link to an article that shows how to use a page to Make a Photo Blog.

In a Journal style gallery there's a description you can fill at the top that shows on every page. Below that
are the gallery photos, each can have a title caption. The photos flow to a number of pages.

That site has added a HTML widget to the page with all the text and photos in it. Notice it's one long page
    with no page breaks.

Thanks all. I started a page as suggested and started working from there. It does seem that it will be significantly more tedious; add text, add photo, add text, add photo, etc.

Probably the easiest, use real Journal style galleries for each day. At the start and end of each gallery add links to other days.
Or add the other day links in the gallery description along with a nice description of the day.
Within each of these galleries if you have a lot of photos you get the advantage of Journal Style gallery paging.
BTW, the text for each photo, title/caption will be under each photo.
