I wondered if there is any customization that can be done to allow the description to sit under pages I have in a folder (in the same way they do for a collage portrait style gallery)
For example on this so a little description sits under the title of each page http://www.ianhuftonphotography.co.uk/Blog/

I can't see a way to do that, automatically. Looking at the source code of your blog, the only code is the individual "blog image/titles". There isn't any description carried from each blog post, if that makes sense. If the description was there, but hidden in CSS, you could try and un-hide it using CSS.
The only way that I can see doing this is to either use a blog platform like Blogger/WordPress or to hand-code each entry on your blog page to include a thumbnail, title and description.
