Can I set up a slide show that plays images in random order?

I would like to have a slide show that plays random images, and those images are in multiple sub folders. Is that possible?

Sure, that is possible. Go to the customizer, drag a slideshow content block to the page, and as the source, you can select "Photos I choose", then choose photos from various galleries. However, it might be easier to set up a new gallery beforehand and collecting images into it for slideshow purposes, then selecting this gallery to be the source for the slideshow. That way, you can easily add and remove photos from the gallery without going into the customizer every time you want to change the slideshow content.
You can enable randomization under the Display tab.
