Not at all, unlike a horizontal normal panorama where the ratio of sky to land stays roughly the same , as the drone camera pans downwards for each frame, the exposure needs increasing as there is less light from the sky in the lower frames and they would be underexposed without any light from the sky as in the top frames .

Yes video feed to screen is real time so all exposure adjustments are seen same as in live view on dslr.
