How to change background color, font size, and color in an individual gallery

I haven't found this question/answer recently, assistance greatly appreciated.
I am creating a mirror of some pages from another website, and they have a nice boring white background with black type, LOL. I need to change the background and font colors - and the font size while i'm at it - for individual galleries.
Here's a gallery I need to change:

Looks like you should have used a page instead of a gallery. Anyway, you probably already made that Gallery by "Make This Gallery Custom", so add a CSS block and add this:
You used Text Blocks, so you'll have to edit each block to change the font size.

Hi, this works great, and I used the 'Just This Gallery >> THEME' to change the background color for the header and footer.
TANGENT: What is the advantage of a page over a gallery?
I'm not used to using pages. I was originally frustrated by not being able to specify the order of folders, galleries and pages in CUSTOMIZE, and have the ORDER show up as arranged (rather than FOLDER/GALLERY/PAGE). Changing this with CSS turns the physical into the logical, and once you go down that path..... LOL, can illogical gremlins be far behind?

Gallery is just collection of photos. A page is more like a web page, with both text and pictures.
