How do I arrange galleries within a category?

I am sure I am missing something somewhere but I would like to arrange my galleries within a category. This would be so they display in some logical order.

How can I do this?

Thanks I had missed the part that I had to set that feature for all my categories before I would be able to see the option on the category page itself.
