stuck with 16 bit

Iv\'ve been shooting with raw. converting to 16bit (cus its the done thing? -why dunno?).
Ive been working my photos in CS2 and then at the end converting to 8 bit...........:dunno only:dunno , I just did a B/W conversion following the stages set out in DGrin tutorial and at the end I found I could'nt change back to 8 bit.
Anybody know why, our how to change to 8 bit?
Also can shop printers work with 16bit.
