...change the ISO and try again
Inspired by PF's post about "Sunny 16", I decided to actually "give it a shot". I decided to go handheld again, since my flimsy tripod makes moonshooting a real nightmare (pardon for le calambour). I also taped my 1.4 TC and went for a manual focusing with AF confirmation.
Of course, I had to "calculate in" one f/stop I lost in TC, so I moved from f/16 to f/8.
Since I was handholding at 560mm, I decided to go for 1/800th, hoping that IS would also kick in and save me from a nasty handshake blur. The whole setup called for ISO 800.
All in all, here's what I got:

Going from f16 to f8 is actually 2 stops, not one. F11 is one stop for the 1.4x TC
Howver, the moon is not really mid grey either, but white almost like a snow covered field so add one more stop + Exposure Comp and you get exactly what your exposure was. F8 1/800th ISO 800 Very well done, Nick
F8 is probably the sweet spot aperture wise for the 100-400 lens also, and hence optimal for the TC.

You're correct, as always.. But in the end, the exposure was pretty decent. methinks..
