Pro Pricing

I'm looking to make a pricing structure for my galleries. For the first 60 days the customer can enjoy a low pricing deal for prints. After 60 days I'm going to raise the print prices all in an effort to help drive wedding print purchases closer to the decade the wedding was taken.
I'm setting my Portfolio pricing to the low <60 day rates. On the 60th day (or there about) I plan to change the pricing for that gallery ONLY so I've created a hidden gallery with custom pricing. I should be able to use this gallerie's pricing to choose from in the drop down list in order to raise the prices of the wedding gallery.
Question is: How do I ensure that the >60Day pricing gallery will always be in this drop down list? I have other galleries that do not show in this list.
Any Idears?

I have my Portfolio pricing setup. The price for a 4x6 is $2.99. After 60 days I want my prices to increase. The 4x6 will then be $4.99. I'm planning on this to help drive print sales within the first 60 days of a Photoshoot.
The only way I see how to accomplish this is:
1. Set my portfolio pricing as the lower price.
2. Create a ">60Day" gallery and set the custom pricing to the higher price.
3. After 60 days I can go to the photoshoot gallery and set the pricing to the ">60Day" pricing to increase the price.
The problem is: I create a gallery named ">60Day" and set the pricing to the higher price. When I go to the photoshoot gallery that I want to raise the price for and select the "quick pricing" drop down box, how can I ensure that my ">60Day" album will show up in that list?
You'll see a screen shot of my drop down as of now. I'm trying to find out what criteria is used to populate the "quick pricing" drop down box. I removed the custom pricing from some of the galleries showing up in the "quick pricing" drop down box but they still show up in the drop down box.
I'm worried that if I create this ">60Day" gallery with higher prices, how can I ensure that it will always be visible in the "quick pricing" drop down box?
Is that any more clear or was it just as confusing?
and see? Maybe the > is the problem.

So, on Wednesday night or Thursday morning (I made the galleries public yesterday afternoon) I'll go and access the menu you've posted above and select "% increase" and I'll enter 10% and all of the prices will return to "normal".
You can also set it to increase or decrease by dollar and cent amounts by clicking on "increase" or "decrease" and entering an amount.
