Eos was the greek godess of the dawn. (Or in Roman mythology she's Aurora.) She brought light to the morning sky by riding her chariot across the sky.
(Seriously...google it It was a Jeopardy question the other day and it reminded me of this thread. Sorry for dragging up an old post, but I'm a geek who thought it was interesting.

So just to make sure, you don't actually say the letters like you would on some acronyms. You pronounce it as a word? Because this whole time I was saying "E. O. S." (Just saying the letters)

Yes and no.
It is both a word and an acronym. It is a double entendre or double sens.
Useage, in this case, is dependant upon context. EOS, as a word, is used to describe the proprietary system employed, while E. O. S., as an acronym, reminds you how the system works.

Yeah, kinda like ISO, who freely admit that you can call pronounce it, "EZO", "EYE-ZOH" or "EYE-ESS-OH". Just as ISO doesn't REALLY stand for International Organization for Standardization either... What's in a name?

(At least they concede it is an abbreviation of sorts.)

OK, I get it! It also means "Organisation internationale de normalisation" and whatever else they want to translate into. It just takes me a bit longer sometimes. I'm sooo confused.

HAha, not a problem. It's not your fault the ISO people decided to not make their WHOLE site uniform. Both my link AND your link are from the SAME website, ISO.org. And yes, the two langauages of the ISO are French and English, so in order to NOT confuse people with IOS, ISO (which DOES work since in English acronyms need not be in "order") and OIN in French:
it was decided to use a language-independent word derived from the Greek, isos, meaning "equal". Therefore, the short form of the Organization's name is always ISO.
Who knew an idea to make something LESS confusing is what would confuse people.
E means E is derived from the Greek letter epsilon which is much the same in appearance (Ε, ε) and function. The Semitic hêprobably first represented a praying or calling human figure
OS Osmium (IPA: /ˈɒzmiəm/) is a chemical element in the periodic table that has the symbol Os and atomic number 76. A hard brittle blue-gray or blue-black transition metal in the platinum family, osmium is one of the densest natural elements and is used in some alloys with platinum and iridium. The extraordinary density of osmium is a consequence of the lanthanide contraction. Osmium is found native as an alloy in platinum ore and its tetroxide has been used to stain tissues and in fingerprinting. Alloys of osmium are employed in fountain pen tips, electrical contacts and in other applications where extreme durability and hardness are needed.

Awais,
I don't know the commerical that you are referring too, but EOS can be pronounced as E - O - S (just saying the letters) or as a word. That word is pronounced E-os. In this case E and os are syllables (or sounds groups. Pak-is-tan is three syllables.) but they are not seperate words.
Hope that clears it up and good job finding the Wiki that states Eos is the god of dawn, so Ivar doesn't think I made it up Of course there's no mention of the dawn bringing chariot.
I've heard actual Canon employees pronounce it both as "E.O.S." and "E OS", and even "EYE os" (rhymes with ion) once. So as long as you don't pronounce it "Nikon" I think everyone will know what you're referring to.

Okay, okay-- I had to add an "R". And I can think of a better "S" word to describe their current rebate, but you probably get the point.
