Choosing what to offer in the cart?

It sounds like there is a way to do this, but I searched and couldn't find what I was after.

Is there a way to only offer certain items for sale for certain photos/galleries?

For instance perhaps I only want to offer a photo in an 8 x 10 luster.

Or perhaps I don't want any of my photos to be eligible for printing on t-shirts.

Yep, there is. Just put a 0 (zero) in the field, and it will not show up for sale.
