    How do you drop them back a bit ? Its always been the hardest thing for me to do.

    I believe you usually shoot in aperture priority with matrix metering. When shooting in that mode you would need to make negative EV adjustments to a scene as in your last 4 shots (the 3 heron and the anhinga shots). I would have gone with an adjustment of a 3rd or two/thirds of a stop on those shots to preserve the highlight details. The whites around the heron's eye appear to have no detail in them. You may be able to bring the histogram reading down to below 255 in your post work but I don't think you can bring back the blown details.
