how do I customize the actual prints?

I just signed up for a pro trial and I am planning on subscribing very soon, however I do have a question regarding ezprints - now for most of my stuff this question will not apply but for example a wedding - usually those prints are given in an book or special album etc - if the customer can log on to there gallery and choose the prints they want - doesn't ezprints just ships them the prints themeselves?? correct? How do you wedding photographers deal with this? do you have them order and then do the printing yourselves? - I guess what Im trying to say - can a customer order prints from you from your smugmug website and NOT have them printed?

No, thru SmugMug's cart, the customer can only order and have our lab fulfill the order.
