Categories and Sub Categories

I am trying to configure my galleries and am kinda lost. :dunno
What I am trying to do is group them together...
Weddings
\Adam and Courtney
\Wedding 1
\Wedding 2
Sports
\Owlz Baseball
\6-4-2007
\6-6-2007
\game 1
\Golf Championships
\Day 1
\Day 2
I hope that makes some sense. I want to click on the Galleries link from my home page to get a list of all available Categories.

I was able to create the header/navbar/slideshow with the great tutorials here (even though i got confused from time to time).
