Categories, Sub Categories and Galleries

Im trying to organize my photos using Categories, Sub Categoies and Galleries. I currently have several Categories with Galleries in them.
I then wanted to experiment by using a category, Sub Category and then Gallery. When I do this all my previous Categories with Galleries in them disappear. The only thing that will show up is the new Category, Sub Category and Gallery.
If I go back and delete the category I created when creating the Category, Sub Category and Gallery then all my original Categories with Galleries reappear. The Subcategory and Gallery that were in that category appear under the Category "Other".
