Changing from 16bit to 8bit in CS3

I have Photoshop CS3 Extended. I want to change the settings from 16bit to 8bit. I know how to change from 16 to 8bit by going into 'Image' and then 'Mode' and when I change from 16 to 8bit that's ok but when I return it automatically returns to 16. It is a nuisance to do this every time. I want to know where to go into, to check the 8bit as that is what I am using all the time.

    are you opening your raw files through ACR into photoshop?

    When the first screen comes up with the raw conversion options, at the bottom are some boxes where you can choose the resolution, colour space and 8 or 16 bits.

    It seems to remember those settings for the next time you open a raw file.

    Further, you may want to keep the documents in 16-bit!
