You can do really well getting a used Canon 20D or 30D as well. The Flea Market (here) is a good place to look. I actually recently acquired a used 30D that was like-new for my business and it works great. No issues.
The advantage here is that the user interface (the look and feel of the camera) of the 20D/30D is, IMO, superior to that of the dRebel/XT/XTi series of cameras.
I would check with your professors before spending money on a camera. They may have some limitations.
I remember way back in the stone ages I had to argue (successfully) with mine to allow me to use my newfangled Minolta 7000i--it had full automatic settings which he didn't like. He let me use it after promising to switch everything to manual (including that bleeding-edge new auto focus system ).
The D60/D40/D40x cameras only Autofocus with lenses that have the motors in them, otherwise you will have to manual focus them, but it does get you a new camera with two lenses to take you from 18-200mm to get started.

I agree with this, but I would just get a nikon d40, which will leave you about 500-600 bucks for a couple of good lenses!!!! Unless you are printing over a 11x13" print you will not notice the difference and what will make or break that difference will be the lens you choose. So get an ok body, with a really good lens.
As always, check the requirements first before you make a purchase, but I highly doubt you will need something along the lines of a Canon 5D or 1D for that matter (I'm an architecture major, not photography so don't take my word for it, although I hardly doubt you'd need serious hardware like that). I'm a Canon guy, so I'm going to suggest Canon . My dad has a Rebel XT, I have a 30D; personally, I prefer the 30D only because the interface is easier to use and a lot cleaner. The 30D might be a little out of your price range since the body alone is $1100, but if you can spring for it, do it! You might also want to not bother with any kit lenses since they are just "alright", instead, invest in some better quality glass, no need for L glass, but just anything better than the kit lens.

Well I'll throw out the new Sony A350 (14.2mp), quite a capable camera with a vast array of Sony, Carl Zeiss and Minolta AF lens and flashes. The kit is only $899.
And Sony has perfected the live view system that gives you a p/s live view function while shooting and zoom all seen on their 2.7" swing out and tilt LCD screen.

Nikon, Canon, Olympus, Pentax, Sony, and others all make a good one.
Canon and Nikon seem to be the two biggest sellers, though the others are great products and their users really like them.
