I wish to take a portrait & basically unravel it almost the same as this photo. A spiral opening of the head really.

Its a long shot but has anyone got a clue where i can find a tutorial ?

I just know I've seen a PS filter for something like this that rips, unravels and tears an image.

Something similar was posted on Dgrin not long ago. Look here and scroll to post 9 for a link. Not exactly what I think you want, but maybe it can be adapted somehow. It's based on a plugin for GIMP. I don't know whether it can also be found for PS.

I know we had someone project their child's face onto an apple some time ago. I cannot find it anywhere.

I would start with that tutorial, to form the basic bump mapping to the sphere, then cut the fruit (or whatever the host shape might be) and then re-assemble the fruit noting where the cut lines occur (using a seperate layer with drawn lines over the cut lines) and then apply the same cuts to the bump mapped face and then expand the fruit and apply the sliced face onto the sliced fruit.
