What's the best method for cutting out objects in photos, particularly people, to make collages etc...?

Check the links in this thread. There are many ways to make selections and some images work better with certain techniques. You can use the quick mask, pen tool, lasso, magnetic lasso, channels, the list goes on and on. Read those links and see if you can ask more specific questions after that.

One of the many improvements in CS3, involves how selections can be made and the edges refined. I find CS3 a major upgrade over CS2 because of the Refine Edges Command and the Quick Selection tool. These two tools, new in CS3, have really helped me make selections, better, faster, and easier. I use them a great deal.

You also get the newer, better Adobe Camera Raw.


Just a thought......... Remember, digital photography is so much cheaper than film - repeat that to yourself three times.

Separating hair from the background is challenging, so you had best work with bald people.

Seriously, there is no simple answer to your question. Photoshop offers many different tools. In all but the simplest cases, you will need to use several to get good results in a reasonable time. Which ones are appropriate depends completely on the image itself.

If you are "just playing around," learn to use the magic wand and refine the selection with quick mask. If you are more demanding, Katrin Eismann's book, Photoshop Masking & Compositing is a must read. Be warned that it's 500 pages long, though it is well-written and illustrated.
