Gallery Customization

Hi, I'm pretty sure there's a way to do this, but thought I'd ask before I went crazy trying to figure it out on my own. I want to create a seperate gallery for my portfolio and then catagorize them within that gallery, so it displays like my gallery page. For example, I want to have seperate galleries in my portfolio section (maternity, babies, kids, etc) so my clients can view each portfolio catagory seperately. And I want my galleries page to only be a proofing gallery. I hope this makes sense--any help would be greatly appreciated.
