Difference in Matte paper

Hi - I have not ever used Matte on processing. Is Matte with out texture? Can you help explain what type of photos I would use matte for? I am starting a project and think that matte might be a good choice for the project but need a more experienced photographer to help me out with my decision. I am doing an old fashion looking photograph (desaturated & color spot painted), and would like to know if someone knows the type of paper that I would use for processing.

I think it boils down to personal preference. I use matte paper almost exclusively for everything I print and my paper of choice is Epson's Matte Heavyweight (44lb) which has a slight linen texture.
