I have a couple of shots recently purchased that the customer wants framed. They show up best as 8 x 12 but not really sure the best way to go about displaying them. These are nature shots - a sunset, a lake and a bay.
Any help would be appreciated.

Standard sizes, except for the opening of the mat board. Just use an 11x14 mat board (like you would for an 8x10 image) and cut the opening to accept the 8x12 photo. Allow maybe a quarter inch on all four sides of the photo for affixing to the back of the mat.
This size of mat, 11x14, fits a standard size frame of the same size.
This was such a straight forward question and answer that I am wondering if this is what you were really asking for...?

Chris - I think you and Mike have hit the nail on the head. Did you do the Mat and Mounting yourself?

I copied this from my Pricing and Contact website..."All photos are professionally printed on Kodak Professional paper. Matted photos are pH Neutral, Bainbridge Papermat in "Fabric White", single-mat. Framed and matted photos are framed in "Matte Black", Nielsen #117 frame."
I do all the work myself.
