To add, remove, or change watermarks use the Organizer and not the gallery settings. The gallery settings page only applies to future uploads to that gallery, not images that are currently there. Are you using the Organizer to add/remove/change watermarks and still having problems?
See Allen's answer to where you should be going to do most of that on Legacy. Also, if you're trying to remove old watermarks & then put new ones on, it's more foolproof if you actually remove them (through Tools > Multiple Photos > More > Watermarking) & then waiting awhile (til you see them removed) to go back & choose another one to watermark them with. I've done it both ways, but once a Hero recommended that method & I've seen it "stick" better.
One caveat though: If you're going to crop a photo, or rotate a photo, or change/crop the thumbnail on a photo, it will usually revert back to whatever watermarking you have set in "Gallery Settings". It's a pain, but you'll have to go back in & individually reset the watermark through the method in the paragraph above if you've done something to the photo that is making the system create a new thumbnail. The system should remember your choice of watermark in those cases, but it doesn't. It's just one of those things they never gotten around to fixing. I don't know if new Smug is better in that regard.
