In 2021 Jeff was using the brand new Canon EOS R3 at the delayed and no spectators event.
This year, Jeff is covering the Olympics with the new Canon EOS R5 Mark II and Canon EOS R1 bodies.
His first post he was shooting both wide and telephoto, specifically the Canon R5 II with the Canon RF 24-70mm lens for the wider shots and all the closer shots were taken with the Canon R1 and the Canon RF 100-300mm lens.

What rolling shutter speed (among these) will you recommend for wildlife photography?

For slow-moving and still wildlife, almost any camera will do.
The faster-moving wildlife, like a cheetah closing in on it's prey, or a bird in rapid, diving flight, deserves the fastest readout speed you can afford.
In really good light, the Sony a9 - 3 with it's global shutter and 0ms readout speed, would seem ideal. However, the extra electronics required for each pixel to create the global shutter, makes each pixel less efficient at collecting light, so shadow areas tend to suffer from high random noise levels, requiring noise-reduction remediation. The noise reduction greatly reduces shadow details and reduces dynamic-range overall. So this camera may not be a good choice at all in low-light.
For a working professional with a heavy investment in Sony professional lenses, the combination of a Sony a9 - 3 body and a Sony a1 body for low-light would be my recommendation.
In the Nikon lineup, I hear really good things about the Nikon Z9. If you don't need the ultimate speed advantage of the Z9, the Nikon Z8 has most of the same internals and resulting properties and image quality, although I've not seen any mention of image readout speeds specific to the Z8.** Contact Nikon to be sure before any purchase.
**Reading more about the Nikon Z8, it looks like the reason I don't find separate sensor readout speed tests for the Z8 is because the image sensor block and image processor section of the camera appears to be the same on both the Z8 and Z9 bodies, indicating an identical sensor readout speed on both bodies.
In the Canon lineup, the EOS R3 and now the flagship EOS R1, have the most desirable qualities regarding readout speed and reduced rolling shutter. The R3 has a rather remarkable mechanical shutter which helps to further attenuate the effects of it's rolling shutter.

I'm not sure that his understanding of the USB-C Port and external power PD mode is accurate. Even on the Canon EOS R8 people continue to misunderstand what you need for optimal function.
